- 1 teaspoon sea salt
- 3 garlic cloves, grated
- 1 teaspoon Dijon mustard
- ¼ teaspoon ground cumin
- ¼ cup of fresh lemon juice
- 1 cup of extra-virgin olive oil
- 1 teaspoon Italian seasoning
- Freshly ground black pepper
For the Salad
- 1 cup uncooked
- 3 Persian cucumbers,
- Halved ½ cup red onion,
- ¼ cup fresh mint leaves
- ¾ cup yellow vine tomatoes,
- ¼ cup chopped fresh parsley
- 4 red radishes, properly sliced
- Thinly sliced in a crescent shape
- Top ½ cup crumbled feta cheese
- 2½ cups cooked French green lentils,
- Diced 4 kale, without stem, leaves torn
- Full ½ cup pitted and halved green olives
Lentil of course our main ingredient in the recipe. Here I like to use French lentils for this salad. Because it’s not changed, it’s color and holds its shape During the cook. It was really nicely cooked.
I really love their taste and juicy texture in the salad. You add any type of cherry or grape tomato to the salad. It’s available in many different colors, but I like the yellow ones there. It looks very pretty and good in taste. You add according to your taste any tomato in there.
Cucumbers and radishes
I always like to include vegetables in lunch salads when I can. I use kale here because it holds up well under the dressing even when I make this salad ahead.
It adds a delicious taste to the recipe. And it’s very healthy and balances our lentil salad taste. You also either olives if you are not available Green olives.
