DOUBLE CHEESE SMASH BURGERS RECIPE

Makes four double cheese hamburgers; for less ravenous appetites, cut in half.

Just a sturdy frying pan will do for this.

1 kilogram of top-notch beef mince

liberal quantities of salt and pepper

Don’t criticize me, but I like cheese slices that come in plastic sleeves.

Sliced gherkins, mayo, American mustard, ketchup, lettuce, your choice, and fries on the side, of course. Toasted brioche bread.

As your burgers won’t take long, put your chips in the oven. Additionally, get your sides ready, bake your brioche buns, and get your sauces ready.

Heat a little oil in a sizable, heavy-bottomed frying pan on high heat.

Take your mince and divide it into 8 equal chunks. Form the mince into huge balls, not compacting it; merely fashion it into a ball.

Place four beef balls in a heated frying pan and press down hard with a spatula. Flatten into patties, without caring if they seem a little ragged. Season the burger tops liberally with salt and pepper. Cook for 2 to 3 minutes, or until the bottom is crisp and browned.

When the burgers are turned over, push them down, season the tops once more, and then add the cheese pieces. As soon as the bottom of the patties are browned and the cheese has melted, continue cooking for an additional 2 minutes, or until the burgers are medium rare or cooked to your preference.

While you proceed with the second batch, keep the first batch of burgers warm on an oven tray. Place two cheese-topped hamburgers into a toasted brioche roll, then top with sauces and sides to serve.
